  • 24 large cooked prawns
  • 2 lemon, juiced and rind finely grated (save 3/4 cup lemon juice)
  • 3/4 cup caster sugar
  • 2tablespoons vodka

Method

Step 1 of 6

Place 2 1/2 cups water, sugar in a small saucepan over a medium heat & stir until the sugar has dissolved.

Step 2 of 6

Set aside to cool completely.

Step 3 of 6

Stir in the lemon rind, lemon juice & vodka.

Step 4 of 6

Place in a shallow metal container.

Step 5 of 6

Freeze for 4-5 hours or until completely set.

Step 6 of 6

Rake with a fork.
