Description
In this speciality of the tapas bars of Andalucia, freshly caught raw prawns are cooked to order in little earthenware cazuela.
Method
Step 1 of 3
Clean the prawns and devein them, if necessary.
Step 2 of 3
Heat the oil in an earthenware cazuela or a small frying pan. Add the prawns, garlic, and chillies, sprinkle with a little salt, and fry for 1-2 minutes, until the prawns change colour and become opaque.
Step 3 of 3
Serve immediately with cocktail sticks or wooden forks, and plenty of soft-crumbed bread for mopping up the juices.
