Griddled Prawns With Hot Pepper Sauce

- 250grams large raw prawns, unpeeled
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 2tablespoons olive oil
- 1 fresh hot red chilli, deseeded and finely chopped
- 1 clove garlic, grated or finely chopped
- 1teaspoons hot chilli powder
- 1teaspoons paprika
- 1 pinch ground cumin
- 1 lime, juice only
- 4-5tablespoons mayonnaise
Method
Step 1 of 3
Put the prawns in a bowl, and combine with 1 tablespoon of the olive oil and the chilli. Toss well, and set aside.

To make the hot pepper sauce, in another bowl, stir together the remaining olive oil, garlic, chilli powder, paprika, cumin, lime, and mayonnaise until well combined. Taste, and season accordingly.
Step 3 of 3
Heat a large heavy frying pan or ridged cast-iron grill pan over a high heat. Tip in the prawns, cook them for about 2 minutes on each side until they turn pink. Serve with the hot pepper sauce, salad, and fresh crusty bread.
