  • 1 cup whole egg mayonnaise
  • 2tablespoons baby capers, drained, roughly chopped
  • 1/2 lemon, zested, juiced
  • 1 1/2tablespoons dill, roughly chopped
  • 1 mango, peeled, chopped
  • 3teaspoons Dijon mustard
  • 2teaspoons pure honey
  • 1tablespoons lemon juice
  • 1 bunch continental parsley, leaves picked
  • 1 small clove garlic, roughly chopped
  • 1 small jalapeno, coarsely chopped
  • 1 spring onion, roughly chopped
  • 1 lime, juiced
  • 2tablespoons extra virgin olive oil

Description

This platter of prawns with three delicious dipping sauces of tartare, sweet chill mango mustard and chilli and zesty lime will be sure to impress.

Method

Step 1 of 3

To make the tartare sauce, place mayonnaise, capers, zest and lemon juice, and dill in a small bowl. Season and stir until well combined. Sprinkle with extra dill and capers, then serve with prawns and other two sauces.

Step 2 of 3

To make the sweet mango mustard, place mango, mustard, honey and lemon juice in a food processor. Season, then process until smooth. Spoon into a small bowl and serve with prawns and other two sauces.

Step 3 of 3

To make the chilli and zesty lime sauce, place parsley, garlic, jalapeno, onion, lime juice and oil in a food processor and process until combined and finely chopped. Spoon into a small bowl, then season and serve with prawns and two other sauces.
