- 60 large green prawns, peeled, deveined, tails intact
- 2tablespoons rice wine vinegar
- 1/3 cup oyster sauce
- 1/3 cup coriander sprigs
- 2tablespoons honey
- 1 lemon, 2 tbs juiced
- 1 lemon, cut into wedges (to serve)
- 2tablespoons soy sauce
- 2tablespoons sriracha chilli sauce
Method
Step 1 of 3
Combine sauces, vinegar and honey in a large bowl. Add prawns and toss to coat well. Cover and refrigerate for 1 hour.
Step 2 of 3
Thread 6 prawns each on 20 skewers and place on a tray. Repeat with remaining prawns and skewers.
Step 3 of 3
Heat a barbecue grill or chargrill pan over medium-high heat. Cook skewers for 3-4 minutes on each side or until prawns change colour and are cooked through. Transfer to a platter. Add marinade to a saucepan, bring to the boil and cook for 2 minutes to reduce slightly. Add lemon juice. Brush prawns with some of the sauce, scatter over coriander and serve with remaining marinade and lemon wedges.
