- 1 lemongrass stalk, finely chopped
- 1 shallot, chopped

- 1 garlic clove, chopped
- 1 pinch ground coriander
- 1 pinch saffron
- 1tablespoons oil
- 1/3 cup coconut milk

Marinate 20 raw king prawns for 1 hour in 1 finely chopped lemongrass stalk, 1 chopped shallot, 1cm piece grated ginger, 1 chopped garlic clove, pinch each of ground coriander and saffron, and 1 tbsp oil. Remove the prawns and cook the marinade for 5 minutes over low heat. Add 100ml coconut milk and salt and black pepper. Bring to a boil, add the prawns and simmer until they are cooked, about 3 minutes.Arrange 1 prawn on each spoon. Drizzle over the sauce. Garnish with coriander.
