  • 100grams thin rice noodles
  • 1 carrot, coarsely grated
  • 1 Lebanese cucumber, coarsely grated
  • 1 spring onion, chopped
  • 2tablespoons sweet chilli sauce
  • 4 lettuce (4 leaves)
  • 125grams prawns, cooked, peeled

Method

Step 1 of 4

Soak rice noodles in boiling water for 5 minutes until softened.

Step 2 of 4

Drain well and combine with sweet chilli sauce, 1 coarsely grated carrot and 1 coarsely grated lebanese cucumber.

Step 3 of 4

Divide noodle mixture between leaves of 4 sweet crunch lettuce leaves.

Step 4 of 4

Add cooked, peeled prawns and spring onion. Serve on a platter.
