- 20 peeled king prawns
- 1/4 cup flavoured mayonnaise (to serve)
- 1teaspoons lemon, zest, grated
- 1 pinch salt
- 1 pinch pepper
- 1teaspoons olive oil
- 1teaspoons lemon juice
- 1 pinch cayenne pepper
- 20 large snowpeas
- 1/4 cup aïoli (to serve)
Method

Marinate 20 peeled king prawns in 1 tsp grated lemon zest, a pinch of salt and pepper, 1 tsp olive oil, 1 tsp lemon juice, and a pinch of cayenne pepper. Blanch 20 large mangetout in boiling salted water for 1 minute, drain, refresh in cold water, and pat dry. Thread 1 end of the snowpeas onto a skewer, then a prawn followed by the other end of the snowpeas. Serve with aïoli or another flavoured mayonnaise.
