  • 24 Pacific oysters
  • 1/2 cup coriander (save 2 tbs to garnish)
  • 2teaspoons finely grated ginger
  • 1 spring onion, thinly sliced
  • 2tablespoons rice wine vinegar
  • 1 lime juiced
  • 1 lime wedges (to serve)
  • 2tablespoons mirin
  • 2tablespoons reduced-salt soy sauce
  • 1 fresh long red chilli, deseeded, thinly sliced

Method

Step 1 of 2

Place chopped coriander, vinegar, mirin, soy sauce, zest, lime juice and ginger in a bowl. Stir to combine. Season to taste.

Step 2 of 2

Arrange oysters on a platter. Spoon dressing over each and top with onion, chilli and extra coriander. Serve with extra lime wedges.
