- 24 Pacific oysters
- 1/2 cup coriander (save 2 tbs to garnish)
- 2teaspoons finely grated ginger
- 1 spring onion, thinly sliced
- 2tablespoons rice wine vinegar
- 1 lime juiced
- 1 lime wedges (to serve)
- 2tablespoons mirin
- 2tablespoons reduced-salt soy sauce
- 1 fresh long red chilli, deseeded, thinly sliced
Method
Step 1 of 2
Place chopped coriander, vinegar, mirin, soy sauce, zest, lime juice and ginger in a bowl. Stir to combine. Season to taste.
Step 2 of 2
Arrange oysters on a platter. Spoon dressing over each and top with onion, chilli and extra coriander. Serve with extra lime wedges.
