  • 36 pacific oysters
  • 2tablespoons parsley, finely chopped
  • 1 shallot, finely chopped
  • 2tablespoons rice wine vinegar
  • 2tablespoons parmesan, finely grated
  • 2tablespoons prosecco
  • 1/3 cup dried craisins
  • 1tablespoons chives, finely chopped

Method

Step 1 of 1

Cover a large platter with sea salt. Place 3 dozen Sydney rock or Pacific oysters on the platter. Just before serving, spoon toppings (see below) on oysters. Tabasco & parmesan butter: Whisk butter until light and creamy. Stir in parmesan, Tabasco and chives. Season. Garnish with extra chopped chives. Prosecco: Combine vinegar and shallot in a bowl. Add prosecco to mixture. Garnish with micro herbs (may not be available at all stores). Cranberry & horseradish: Finely chop dried cranberries and combine in a bowl with parsley and horseradish cream. Season with salt and pepper.
