  • 1/3 cup coconut cream
  • 2tablespoons fish sauce
  • 1 long green chilli, deseeded, finely chopped (red chilli can substitute)
  • 1/2 cup coriander, leaves finely chopped
  • 1/2 cup mint, leaves finely chopped
  • 1 lime, rind finely grated (plus juice)
  • 500grams soft shell crab, crispy battered
  • 1tablespoons caster sugar

Method

Step 1 of 2

Preheat oven to 200°C. Line a tray with baking paper. Place crab pieces onto prepared tray and bake for 20 to 25 minutes, turning once, until golden.

Step 2 of 2

Meanwhile, process remaining ingredients in a food processor until smooth. Transfer to a serving bowl. Place crab onto a platter and sprinkle with mint and coriander. Serve with dressing.
