  • 2 cloves garlic, sliced
  • 1.50kilograms mussels, cleaned, live
  • 3/4 cup dry white wine
  • 1 handful flat leaf parsley, chopped
  • 4 slices crusty bread (to serve)

Method

Step 1 of 3

Heat the oil in a large saucepan. Add the garlic and cook for 30 seconds until lightly golden. Add the mussels and wine.

Step 2 of 3

Cover the pan and cook for 5 minutes, shaking the pan occasionally, until the mussels have opened. Discard any that remain closed.

Step 3 of 3

Stir in the parsley, then serve with crusty bread.
