- 2kilograms mussels
- 50grams butter
- 4 spring onions, sliced
- 4 cloves garlic, peeled and minced
- 2/3 cup white wine
- 100grams creme fraiche
- 3tablespoons parsley, fresh, chopped
- 4 slices crusty bread
Description
Ireland is world renowned for quality seafood and a pot of steamed mussels is an essential Irish summer treat.
Method
Step 1 of 4
Rinse the mussels and discard any that are open or damaged. Melt the butter in a large, deep pan and cook the spring onions and garlic for 4-5 minutes.
Step 2 of 4
Tip the mussels into the pan along with the white wine. Cover with a lid and cook for 5 minutes, stirring occasionally.
Step 3 of 4
Stir in the creme fraiche and parsley and cook for 2-3 minutes, until the mussels are open. Discard any unopen mussels.
Step 4 of 4
Serve with crusty bread for mopping up the sauce, if desired.
