  • 2 eggs
  • 2tablespoons fizzy water, cold
  • 150grams plain flour
  • 1teaspoons chilli flakes
  • 1teaspoons salt
  • 500grams squid, gutted, cleaned, and cut into 1cm rings
  • 1 cup vegetable oil
  • 1 lemon, cut into wedges (to serve)

Method

Step 1 of 2

Break the eggs into a bowl, add the fizzy water, and beat well with a hand whisk. Put the flour, chilli flakes, and salt on a plate and mix well. Dip each piece of squid into the egg mixture and then into the flour, making sure they are evenly coated, then put to one side.

Step 2 of 2

Heat the oil in a deep frying pan over a high heat until hot, then carefully add the squid, one piece at a time. Do not overfill the pan. Cook in batches for 2-3 minutes, or until golden brown. Remove with a slotted spoon and place on kitchen paper to remove any excess oil. Serve with a squeeze of lemon.
