  • 3 dozen oysters (on a bed of ice)
  • 2-3teaspoons wasabi paste (for wasabi & pickled ginger topping)
  • 2 rasher rindless bacon (for crispy bacon & balsamic dressing)
  • pink pickled ginger, finely chopped (for wasabi & pickled ginger topping)
  • 2tablespoons balsamic vinegar (for crispy bacon & balsamic dressing)
  • 1 lemon (for lemon salt toppings)
  • 1/3 cup whole egg mayonnaise (for wasabi & pickled ginger topping)
  • 2tablespoons sea salt flakes (for lemon salt toppings)

Method

Step 1 of 3

TOPPING Lemon Salt: Pound finely grated rind of 1 lemon and 2 tbs sea salt flakes in a mortar and pestle until a fine salt forms. Sprinkle over oysters.

Step 2 of 3

TOPPING Wasabi & Pickled Ginger: Combine 1/3 cup whole egg mayonnaise, 2-3 tsp wasabi paste and 1 tbs hot water in a bowl. Stir until well combined and smooth. Spoon over oysters. Top with finely chopped pink pickled ginger.

Step 3 of 3

TOPPING Crispy bacon and Balsamic Dressing: Finely dice 2 rashers rindless bacon. Cook for 3-4 minutes or until crisp. Stir in 2 tbs balsamic vinegar, salt and white pepper. Spoon over oysters.
