Scallops With Sweet Chilli Sauce

- 4 cloves garlic, grated or finely chopped
- 3 medium red chillies, deseeded and finely chopped
- 3tablespoons dry sherry
- 1tablespoons caster sugar
- 4tablespoons olive oil (save 2 tbs, for frying )
- 12 large scallops
Method
Step 1 of 2
Put the garlic, chillies, sherry, and sugar in a bowl and mix well until the sugar dissolves. Add the oil and scallops, toss together, then leave to marinate for at least 30 minutes.
Step 2 of 2
Transfer the scallops to a plate, using a slotted spoon. Reserve the marinade. Heat a little olive oil in a non-stick frying pan and cook the scallops over a high heat for 1 minute on each side. Remove from the pan and pour in the marinade. Cook over a high heat for 3 minutes, then pour over the scallops. Serve with a crisp green salad.
