- 1/4 cup loose leaf tea
- 1/2 cup rice
- 2 dozen fresh oysters (on half shell)
- 1 ripe tomato, seeded and diced
- 2tablespoons red onion, finely chopped
- 2tablespoons extra virgin olive oil
- 1tablespoons dill
- 1teaspoons fennel seeds
- 2tablespoons lemon juice
- 1/4 cup brown sugar

Method
Step 1 of 4
To make the salsa, combine tomato, onion, dill and lemon juice in a small bowl. Season and set aside.
Step 2 of 4
Line a wok with a double layer of foil. Combine rice, tea, sugar and fennel in a bowl. Spread rice mixture over foil and place a rack into the wok to sit above the rice mixture.
Step 3 of 4
Cover wok and place over high heat. When it starts to smoke, arrange the oysters on the rack. Recover with lid and smoke for 3 minutes.
Step 4 of 4
Transfer oysters to a serving platter and top each with a little of the salsa. Drizzle with oil and serve immediately.
