Tartare dressing
- 100grams baby gherkins
- 2tablespoons capers
- 1 lemon, zested (juiced)
- 1/2 cup mayonnaise
- 1/4 cup olive oil
- 1/2 bunch dill (sprigs picked, and to garnish)
- 1 bunch chives, finely chopped
- 100grams butter (softened)
- 1 red onion (thinly sliced into rounds)
- 400grams baby white potatoes
- 2tablespoons lemon juice
- 30grams baby rocket
- 6 lobster tails (shells removed, cooked )

Method
Step 1 of 6
To make the tartare dressing, place all the ingredients, except chives, into a small food processor and process to combine. Transfer to a bowl, stir in chives and season to taste. Set aside.
Step 2 of 6
Place butter and 1/4 cup tartare dressing into a bowl and stir to combine. Set aside.
Step 3 of 6
Meanwhile, place onion and lemon juice in a small bowl and set aside to pickle slightly.
Step 4 of 6
Steam potatoes following packet instructions. Transfer to a bowl, squash roughly, add half the butter mixture and toss to coat. Set aside.
Step 5 of 6
Preheat oven grill to high. Place lobster meat on a board and make several cuts, two-thirds of the way through. Smear with remaining butter mixture and place onto a foil-lined baking tray. Grill for 3 minutes or until butter melts and lobster is golden and warmed through.
Step 6 of 6
Transfer lobster to a serving platter with potatoes, onion, rocket and dill. Serve with remaining tartare dressing.
