Green Tea Ice-Cream

- 2teaspoons cornflour
- 300milliliter thickened cream
- 2 cup milk
- 1teaspoons vanilla extract
- 6 green tea bags
- 3 egg yolks
- 1/4 cup caster sugar
- 250grams frozen mixed berries
Method
Step 1 of 3
Place milk and tea bags in a saucepan and bring to boiling point. Remove from heat and leave tea bags in milk to infuse for 15 minutes.
Step 2 of 3
In a bowl, whisk egg yolks, caster sugar, cornflour and vanilla extract until pale and creamy. Discard tea bags and gradually whisk milk into egg mixture. Return to saucepan and stir over low heat until mixture thickens. Refrigerate until cold.
Step 3 of 3
Beat thickened cream in a bowl. Fold cream into the tea mixture. Pour the cream mixture into a shallow container and freeze for 2 hours until the edges are frozen. Process in a food processor until smooth. Pour back into container and refreeze. Repeat the process until creamy. Scoop ice-cream into serving bowls and top with fresh berries.
