- 500grams chilli (chilli of your choice)
- 1 bunch fresh flat leaf parsley
- 2 bunch fresh coriander
- 2tablespoons garlic, chopped roughly
- 2teaspoons salt
- 1teaspoons ground cumin
- 1/2teaspoons ground black pepper
- 1/4 cup extra virgin olive oil (plus extra for popping on top)

Description
Heaven in a Jar. The smell and taste of this is divine, makes your salad sandwiches sing.
If you love a bit of heat in your food, you'll love this.
Instruction tip
Add to some plain yoghurt to make a zingy dipping sauce, compliments salad rolls & sandwiches. Lovely with falafels, hummus, great with lamb.
Method
Step 1 of 7
Firstly wash all coriander, parsley and chillies. Leave to dry completely, this is very important to do. As it could effect the storage of finished product, have learnt this over the years.
We used baby chillies and some jalapeno chillies, but use whichever ones you like as long as weight = 500g.
Step 2 of 7
Halve and de-seed your dried chillies and pop into food processor.
Step 3 of 7

When all has been combined and minced to your liking, add in your olive oil and blitz again to thoroughly mix in.

Put into your storage jars and cover with some more extra virgin olive oil, store in fridge for around 3 months.

This makes around 3 good cup fulls, and also depending how you like to spread it on you should get about 50 to 75 serves on bread.

Add in your garlic, salt and pepper and ground cumin. Then add your dried coriander and parsley, give these a bit of a rough chop before hand. Will help your blender to combine. You also might have to add these in 2 or 3 batches, until it's been minced down a bit.
