- 225grams chickpeas, canned, drained
- 1/4 cup olive oil
- 8 oatcakes (to serve)
- 1teaspoons toasted pine nuts (to serve)
- 1teaspoons coriander (to serve)
- 1/4 cup lemon juice
- 2 garlic cloves
- 1teaspoons salt (to taste)
- 1teaspoons black pepper (to taste)
- 1/4 cup water, cold
- 3 piquant peppers
- 1 red chilli, seeded
- 3tablespoons tahini paste
Method

Purée 225g drained canned chickpeas with 50ml lemon juice, 2 garlic cloves, salt and black pepper to taste, 30ml cold water, 3 mild piquant peppers,1 seeded red chilli, 3 tbsp tahini paste, and 30ml olive oil in a blender or food processor. Taste to check the seasoning. To serve, place 1 tsp of the hummus on top of each oatcake, garnish with sliced red chilli, toasted pine nuts, and coriander or parsley.
