  • 1/4 cup hulled tahini
  • 1/2teaspoons sweet paprika
  • 3tablespoons extra virgin olive oil
  • 1/2teaspoons ground cumin
  • 400grams tin chickpeas, drained
  • 1/2 lemon, juiced
  • 1 clove garlic, minced
  • vegie sticks (or brown rice crackers, to serve)
  • 1/2 cup beetroot, cooked (or tinned)

Method

Step 1 of 2

Place beetroot, chickpeas, lemon juice, tahini, garlic, spices, a pinch of salt and 2 tbs water in a food processor and pulse to combine.

Step 2 of 2

With the motor running, slowly drizzle in the olive oil and process until smooth and creamy. Transfer to a bowl and serve immediately with veggie sticks or rice crackers.
