Rosemary, Feta & Walnut Damper

- 100grams feta cheese, crumbled
- 3 cup self-raising flour
- 80grams butter, cold, chopped
- 3/4 cup milk
- 2tablespoons moroccan seasoning
- 1/4 cup rosemary sprigs, finely chopped
- 1/3 cup walnuts, chopped
- 2teaspoons salt
Method
Step 1 of 4
Preheat oven to 200°C. Grease a baking tray.
Step 2 of 4
Sift flour into a bowl. Add rosemary, seasoning and salt. Stir until combined. Using fingertips, rub butter into flour mixture until it resembles fine breadcrumbs.
Step 3 of 4
Stir feta and walnuts into mixture. Combine 1/2 cup milk with 1/2 cup water in a jug. Add to flour mixture and stir until mixture comes together. Turn onto a lightly floured surface and lightly knead into a 20cm-round bun. Cut a large cross on top and brush lightly with remaining milk. Season. Transfer to tray.
