Poached Peaches

- 6 peaches
- 1 orange rind, finely shredded
- 1 cup caster sugar
- 100mg saffron
Method
Step 1 of 5
Place 6 peaches in a large pan of boiling water for about 1 minute or until the skin splits. Remove with a slotted spoon and refresh in a large bowl of iced water.
Step 2 of 5
Use a small knife to peel away the skin and cut each in half following
the natural seam. Twist to separate and remove the stones. Cut each half
in half.
Step 3 of 5
Stir 2 cups water, 1 cup caster sugar, finely shredded rind of
1 orange and a good pinch of saffron in a saucepan over low heat until
sugar dissolves. Increase heat to high and bring to the boil.
Step 4 of 5
Reduce
heat and simmer, uncovered for 10 minutes or until thickened and syrupy.
Cool for 10 minutes.
Step 5 of 5
Place peaches into a clear, sterilised, sealable
jar or container and pour over the syrup. Seal and keep refrigerated for
2 weeks.
