  • 3tablespoons natural yoghurt
  • 1tablespoons fresh mint leaves
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 1 Baby Gem lettuce
  • 3 beetroots, cooked and sliced

Method

Step 1 of 2

Put half the cheese, the paprika, yoghurt, and mint in a food processor and whiz to a creamy paste. Crumble in the rest of the cheese and season with salt and black pepper.

Step 2 of 2

Break up the lettuce into leaves, creating at least eight boats, place a couple of slices of beetroot in each, then fill each one with a heaped teaspoon of the cheese mixture. Serve with fresh crusty bread and chorizo.
