- 2tablespoons cider vinegar
- 1 1/2tablespoons soft brown sugar

- 2tablespoons fresh orange juice, strained

Place vinegar, orange juice, and brown sugar in a small saucepan and stir over a high heat until sugar has dissolved. Stir in onion, star anise, orange rind and cinnamon. Add cherries and bring to the boil. Reduce heat and simmer for 40-45 minutes, or until most of the liquid has evaporated. Set aside to cool.
