- 1teaspoons coriander seeds
- 1 red onion, chopped
- 1 bunch radishes (to serve)
- 1 lemon, 2tsp of lemon juiced, rind finely grated
- 1 cup natural cashews
- 100grams gluten-free crackers (to serve)
- 1/2teaspoons cumin seeds
- 1 clove garlic, chopped
- 300grams celery, sticks (to serve)
- 1/4 cup coconut oil
- 2 cup beetroot, peeled, grated
- 300grams carrot sticks (to serve)
Method
Step 1 of 3
Heat coconut oil in a large frying pan over medium heat. Add onion and cook for 5 minutes or until soft. Add garlic, beetroot and spices and cook, stirring regularly, for a further 8-10 minutes or until beetroot is soft.
Step 2 of 3
Cool slightly then transfer to a food processor. Add cashews, 1/2 tsp salt, lemon juice and rind, and process for 2-3 minutes, scraping down sides of food processor, until smooth.
Step 3 of 3
Spoon pâté into a serving dish. Cover with plastic wrap and refrigerate for 3-4 hours or until firm. Serve with crackers and crudités.
