  • 1 cinnamon stick
  • 3 cloves
  • 1 3/4 cup vinegar
  • 2kilograms fresh cherries
  • 2 1/2 cm piece ginger
  • 1 1/2 cup caster sugar

Method

Step 1 of 5

Wash cherries and leave stalks on as they look much more attractive. Prick once or twice with a needle or thin skewer and place into a large bowl.

Step 2 of 5

Tie cloves, ginger bruised, and cinnamon stick in a piece of muslin. Heat caster sugar, vinegar and spice bag in a saucepan until sugar dissolves.

Step 3 of 5

Simmer for 20 minutes, then pour over cherries. Leave to stand at room temperature for 24 hours.

Step 4 of 5

Drain off liquid into a saucepan, reheat and pour back over cherries. Leave to stand for another 24 hours.

Step 5 of 5

Now, reheat cherries with the liquid, bringing it slowly to the boil. Bottle cherries with syrup, cover and seal.
