- 24 cooked prawns, peeled, tails intact, deveined
- 1 1/2teaspoons fish sauce
- 2 avocados, stones removed, peeled, thickly sliced
- 1/2 fresh coriander, sprigs
- 1 Lebanese cucumber, trimmed, peeled into ribbons
- 1 1/2tablespoons lime juice
- 1 1/2teaspoons brown sugar
Method
Step 1 of 3
Divide the avocado, prawns and cucumber among serving bowls.
Step 2 of 3
Combine the lime juice, sugar and fish sauce in a small bowl. Whisk together until the sugar dissolves.
Step 3 of 3
Drizzle the lime dressing over the salad. Top with coriander sprigs and season with pepper. Serve. Note: To devein prawns, use a small sharp knife to make a slit along the middle of the back to expose the dark vein. Use your fingers to carefully pull the vein through the opening at the head end to remove. Use a vegetable peeler to carefully slice the cucumber lengthways into long, thin ribbons.
