Lobster, Endive, Mango & Avocado Salad

- 2 frozen cooked lobsters, thawed
- 1/2 medium avocado
- 1 large mango
- 1 lime juiced and grated
- 1 lime wedge (to serve)
- 1 pinch pepper (for seasoning)
- 100grams baby curly endive leaves
- 2tablespoons cup whole egg mayonnaise
- 1 pinch pink salt ground (to taste)
Method
Step 1 of 3
Cut lobsters in half lengthways and devein. Remove meat from shells, slice and place into a large bowl. Discard shells.
Step 2 of 3
Wash and dry endive leaves. Peel avocado and slice. Remove cheeks from mango and slice. Add endive, avocado and mango to lobster. Toss gently to combine.
Step 3 of 3
Combine mayonnaise with grated lime rind and juice. Season with salt and white pepper. Spoon lobster salad onto serving plates. Drizzle with dressing wand and serve with extra lime wedges.
