- 35grams sachet taco seasoning
- 18 cooked tiger prawns (tails intact)
- 2 avocados (cut into wedges)
- 1 red capsicum, halved (deseeded)
- 2 truss tomatoes (chopped)
- 1 baby cos lettuce (leaves shredded)
- 200milliliter light sour cream
- 1 lime (wedges)
- 150grams corn chips (to serve)
- 2tablespoons olive oil

Method
Step 1 of 4
Preheat oven to 220°C. Grease and line a baking tray with baking paper.
Step 2 of 4
Toss capsicum, oil and 2 tsp taco seasoning on tray and bake for 12 minutes or until slightly charred. Remove, cool and slice thickly.
Step 3 of 4
Meanwhile, combine sour cream and remaining taco seasoning in a small bowl.
Step 4 of 4
To assemble, divide cos between 6 serving glasses. Top with capsicum, tomato, avocado and prawns. Spoon over sour cream mixture and serve with corn chips and lime wedges.
