  • 100grams smoked salmon
  • 400grams medium cooked tiger prawns, peeled, deveined, tails intact
  • 1 Lebanese cucumber, thinly sliced lengthways
  • 1 small red onion, halved, very thinly sliced
  • 2tablespoons small basil leaves
  • 1/2 cup Greek lemon dressing
  • 200grams sweet solanato tomatoes, sliced
  • 1 large avocado, cut into wedges
  • 1 sweet crunch lettuce

Method

Step 1 of 2

Remove the large outer leaves of the lettuce and discard. Thickly slice the lettuce and divide among serving plates.

Step 2 of 2

Arrange the salmon, cucumber, onion, tomato, prawns and avocado on lettuce. Just before serving, spoon over dressing, sprinkle with basil and season with freshly ground black pepper.
