Bloody Mary dressing
- 1tablespoons vodka
- 1/2teaspoons Tabasco sauce (to taste)
- 2tablespoons celery
- 2tablespoons worcestershire sauce
- 1/2 cup extra virgin olive oil
- 1/4 cup lemon juice
Prawn salad
- 1 bunch basil
- 1 small red onion (thinly sliced)
- 5 truss tomatoes
- 2teaspoons extra virgin olive oil
- 20 large green prawns (tails intact)
- 60grams baby spinach leaves

Method
Step 1 of 4
Place prawns into a bowl, add oil and season with salt and pepper. Toss and set aside. Thickly slice tomatoes.
Step 2 of 4
To make the bloody mary dressing, finely chop 2 of the tomato slices and place into a bowl. Add all dressing ingredients and whisk with a fork. Season to taste.
Step 3 of 4
Heat a chargrill or large frying pan over medium-high heat. Add prawns and cook for 2 minutes on each side.
Step 4 of 4
Arrange tomato, spinach, onion, basil and prawns on a platter or board. Drizzle over dressing and serve.
