- 1 lemon, halved
- 1/3 cup extra virgin olive oil
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 350grams smoked salmon
- 1/2 cucumber, finely chopped
- 3tablespoons white wine vinegar
- 1teaspoons wholegrain mustard
- 1teaspoons honey
- 1 handful fresh dill, finely chopped
- 4 slices crusty brown bread, sliced (to serve)
Method
Step 1 of 3
Divide the salmon among 4 serving plates, and squeeze over a little lemon juice.
Step 2 of 3
To make the dressing, put the olive oil, vinegar, mustard, and honey in a jug or small bowl. Whisk together until well combined, then season with salt and black pepper. Sprinkle in half of the dill, and whisk again. Taste, and adjust seasoning as needed.
Step 3 of 3
Toss the cucumber along with the remaining dill, then spoon the cucumber and dill onto the plates. When ready to serve, drizzle over the dressing, and serve with the brown bread.
