- 3.20-3.60kilograms fresh whole salmon, scaled, gutted, and cleaned
- 125grams butter
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 1 handful fresh flat-leaf parsley (save some to garnish)
- 1 lemon, cut into wedges (to serve)
Method
Step 1 of 3
Preheat the oven to 180°C (Gas 4). Lay a large piece of foil on a large baking tray (enough to pull up and cover the salmon). Sit the salmon in the middle of the foil, and dot the butter all over it. Season well with salt and black pepper, then scatter the parsley over the fish, stuffing a little in the cavity if you like.

Loosely pull together the edges of the foil over the salmon, and seal. Bake in the oven for about 1 1/4 hours, calculating cooking time at 10 minutes per 450g, until opaque and cooked through.
Step 3 of 3
Unwrap the foil, remove any straggly bits of parsley, and carefully transfer the salmon to a warm plate. Squeeze over the lemon wedges to serve, and garnish with fresh parsley or watercress. Serve with new potatoes and salad, or grilled asparagus.
