For the chilli and lime dressing
- 1-2 limes, juice only
- 2tablespoons rice wine vinegar
- 2teaspoons light soy sauce
- 1tablespoons sesame oil
- 1/2teaspoons caster sugar
- 2 medium fresh medium-hot red chillies, deseeded and finely chopped
- 350grams trout fish
- 1 large handful salad leaves
- 1 bunch spring onions, finely sliced
- 4 radishes, finely sliced
Method
Step 1 of 3
Whisk together the dressing ingredients, tasting as you go. Add all of the lime juice, if needed, or use less if the dressing is becoming too sour.
Step 2 of 3
Divide the smoked trout among 4 serving plates, then toss together the salad leaves, spring onions, and radishes.
Step 3 of 3
When ready to serve, lightly toss the salad with the some of the dressing, and drizzle the remainder over the trout. Serve immediately.
