- 2 bunch fresh parsley, diced extremely fine
- 1/2 bunch shallots , diced finely
- 4 tomatoes, diced finely
- 2 cucumbers, diced finely
- 1/2 head lettuce, chopped fine
- 1 bunch raddish, sliced thinly
- 1 capsicum, diced finely
- 1/4 cup red cabbage, diced finely
- 1/2 purple onion
- 1/2 cup pomegranate molasses
- 1/4 cup lemon, freshly squeezed juice
- 1/4 cup olive oil
- 1teaspoons sumac
- 1/4teaspoons salt
- 1 slice lebanese bread
- 1/2 bunch fresh mint (or .25 cup dried)

Use whatever extra vegetables you have on hand and in any amount also, this salad is very versatile.
Method
Step 1 of 5
Slice up all your vegetables and place them in a large bowl. Set aside.

I usually just mix this over the same bowl with the salad inside (you can do it in a separate bowl if you like) Start with 1/4 cup of olive oil, 1/4 cup of freshly squeezed lemon juice and 1 tsp sumac, along with the 1/2 cup of pomegranate molasses & 1/4 tsp of salt. Mix all together and taste.

You might need to add more of each of the ingredients to your taste the juice mix is supposed to be sweet, tangy and sour all together but nothing overpowering.

Cut 1 slice of Lebanese bread in strips and roll them up into small rolls and using a toothpick gently put the toothpick through the bread and fry them until golden and crispy. Being careful not to burn them as they cook quickly, This crispy bread is enjoyed fresh and crispy on top of the salad before serving. *(remove the toothpicks)

Alternatively, you can bake them in the grill for a few minutes on each side to for a healthier option which is just as yummy and crunch them up to serve. (Pictured below a bowl of leftover salad with soggy bread just as tasty).
