Green Yoghurt Sauce
  • 1 bunch coriander (plus extra to serve)
  • 2tablespoons lime juice
  • 1/3 cup Greek-style yoghurt
  • 1tablespoons olive oil
  • 2 garlic cloves, crushed
  • 1/4 cup continental parsley
  • 2 large bunches broccolini
  • 1/4teaspoons salt
  • 1teaspoons garlic powder
  • 1teaspoons smoked paprika
  • 1teaspoons onion powder
  • 1/2 cup olive oil
  • 2 cup panko breadcrumbs
  • 1/2 cup buffalo wing sauce

Method

Step 1 of 5

Preheat oven to 210°C. Line a large baking tray with baking paper. Combine buffalo wing sauce, paprika, onion and garlic powders, and oil in a shallow bowl.

Combine breadcrumbs, parsley and salt in a second shallow bowl.

Step 3 of 5

Working in batches, toss broccolini in buffalo sauce mixture, then toss, one stem at a time, in breadcrumb mixture. Place on tray and bake for 10 minutes or until golden.

Meanwhile, to make the green yoghurt sauce, process coriander, garlic, lime juice, yoghurt and oil in a small food processor or with a stick blender until a fine sauce forms. Season with salt and pepper. Transfer sauce to a serving bowl.

Step 5 of 5

Scatter extra coriander over buffalo broccolini, then serve with green yoghurt sauce.
