  • 2tablespoons mint, shredded
  • 3 radishes, cut into fine matchsticks
  • 2 baby cos lettuce
  • 2tablespoons extra virgin olive oil
  • 225grams haloumi, coarsely grated
  • 1 long red chilli, deseeded, finely chopped

Method

Step 1 of 2

Separate lettuce into leaves, wash and refrigerate until ready to serve (see tip).

Step 2 of 2

Combine halloumi, watermelon, radish, mint and chilli in a bowl. Season with pepper and add oil. Toss to coat and spoon into lettuce cups to serve.
