  • 1 clove garlic, crushed
  • 1 Lebanese cucumber, finely diced
  • 1 butter lettuce, leaves separated
  • 2tablespoons mint, chopped
  • 2 cup parsley leaves, finely chopped
  • 3 spring onions, chopped
  • 3 roma tomatoes, finely diced
  • 1teaspoons ground sumac
  • 1/2 cup quinoa
  • 1/3 cup olive oil
  • 1teaspoons dried oregano
  • 1/2 cup lemon , juiced and zested

Method

Step 1 of 4

Cook quinoa as per packet instructions. Transfer to a bowl and cool completely.

Step 2 of 4

Combine quinoa, tomato, cucumber, onion, parsley and mint in a bowl.

Step 3 of 4

Whisk lemon juice, oil, garlic and spices together until combined. Season.

Step 4 of 4

Add 2 tbs of dressing to 1 cup of tabouli and toss through. Spoon onto lettuce leaves and roll up, folding in ends. Pack into an airtight container.
