Method

Step 1 of 2

Thinly slice or dice 2 red onions and place into a glass bowl. Add 1/2 cup rice wine vinegar, 1 tsp sea salt flakes, 1/2 tsp fine white pepper and 1 tsp fennel seeds. Stir until combined.

Step 2 of 2

Cover and stand for 30 minutes. Drain and use to garnish cooked fish, spoon onto a hamburger patty, garnish a grilled chicken breast, toss in a salad or add to a cooked pork cutlet. Onion can be kept in pickling liquid in a sealed jar in the fridge for up to 3 days.
