For the meringue nests
  • 2 medium egg whites
  • 1/2teaspoons cornstarch
  • 1/2teaspoons cream of tartar
  • 80grams caster sugar
  • 1 pinch salt
  • 1/4 cup custard
  • 40grams almonds, crushed
  • 4teaspoons amaretto
  • 4 strawberries (to garnish)

Description

A welcome combination of nuts and sweet custard bring these crunchy meringues nests to life.

Method

Step 1 of 8

Pre-heat the oven to 90°C.

Step 2 of 8

Beat the egg whites until stiff peaks appear.

Step 3 of 8

While mixing, add the cream of tartar, salt and cornstarch and keep mixing to keep the peaks.

Step 4 of 8

Incrementally add the sugar always beating to keep the stiff peaks.

Step 5 of 8

Transfer to a piping bag and dollop about make 6 circular nests with a gap in the centre of each.

Bake in the oven for 60 minutes until lightly browned and hard.

Step 7 of 8

While they are baking you can combine the custard and amaretto in a bowl. (You can serve the custard cold or hot).

Remove nests from the oven and allow to cool fully before serving with the custard and drizzle the almonds on top.
