Apple & Blackberry Jellies

- 500grams blackberries, frozen
- 1 large granny smith apple, peeled, cored and chopped
- 1 medium lemon, juiced
- 550grams granulated sugar
- 1/2 cup liquid pectin
- 1tablespoons canola oil
Description
These homemade jellies are packed with real fruit flavour and are simple to make.
Method
Step 1 of 4
Grease a baking tin with a little oil and line with greased parchment paper. Place the blackberries, apple and 150ml in a saucepan on medium high heat and bring to the boil. Reduce the heat and simmer for 10 minutes. Remove from the heat and blend until smooth with an immersion blender.
Step 2 of 4
Tip into a sieve over a bowl and break the mix down with the back of a spoon to extract the juice and remove the pips. Pour the puree back into the pan with 500g of sugar and lemon juice. Heat until the sugar is dissolved, stirring and cook until it reaches 104°C on a sugar thermometer.
Step 3 of 4
Remove the pan from the heat and stir in the pectin. Heat gently for 10 minutes until the mix reaches 106°C. Pour into the baking tin and set aside to set for 2 hours.
Step 4 of 4
Slice into 36 cubes with an oiled knife, spread 50g of sugar on a plate and toss each cube to coat.
