  • 1teaspoons butter
  • 250grams dark chocolate, shard 40g for garnish
  • 4tablespoons cream
  • 1/3 cup passionfruit puree
  • 2tablespoons maple syrup
  • 40grams icing sugar

Description

The smoky dark chocolate and sour bite of the passionfruit balance these tarts quite well.

Method

Step 1 of 7

Pre-heat the oven to 180°C/160°C fan-forced and lightly butter 6 cupcake holders.

Step 2 of 7

Rolled out the pastry and push into each of the cupcake holders to cover the bottom and edges fully to the top.

Step 3 of 7

Cover the pastry with parchment paper and fill the cavity with uncooked rice or beans to maintain shape.

Step 4 of 7

Bake in the oven for 20 minutes. Remove and allow to cool, remove the parchment and discard the rice or beans.

Step 5 of 7

In a saucepan, melt the chocolate with the cream, maple syrup and puree until melted fully.

Step 6 of 7

Now pour the mixture into the cooled pastry and allow to cool in the fridge for a minimum of 2 hours.

Step 7 of 7

Once ready to serve, garnish with icing sugar and top with chocolate shards.
