- 450grams strong white flour
- 7grams dry yeast, fast acting
- 50grams caster sugar
- 2/3 cup milk, warm
- 2 large eggs, beaten
- 210grams butter, 85g cold and diced, 125g melted
- 1teaspoons salt

- 125grams light brown sugar, divided
- 6tablespoons maple syrup
- 125grams pecans, chopped

Description
These maple sticky buns are a real treat with toasty pecans and cinnamon in the filling.
Instruction tip
You can knead the dough by hand for about 15 minutes if you don't have a stand mixer.
Method
Step 1 of 6
Mix the flour, sugar and salt in the bowl of a stand mixer and rub in the diced flour with your fingers until you have a breadcrumb consistency. Tip in the yeast and beaten eggs. Pour in the warm milk.
Step 2 of 6
Knead in the stand mixer with the dough hook attachment for 7/8 minutes until smooth and springy. Transfer to a clean bowl and cover with a damp tea towel. Leave to rise in a warm place for 1 hour, until doubled in size.
Step 3 of 6
Blitz 75g of brown sugar with the pecans and cinnamon in a food processor. Knock back the dough, lightly knead and roll out into 2 large rectangles.

Brush the rectangles with half of the melted butter and sprinkle over half of the pecan mix. Press the pecan mix gently into the dough to stick. Roll up each rectangle into a long log, sealing the ends. Slice each log into 8 discs.
Step 5 of 6
Brush 2 baking tins with a little melted butter. Mix the maple syrup, remaining pecan mix and sugar and pour into the base of the tins, swirling to evenly coat them. Add the dough discs to each tin, leaving space between. Cover with a damp tea towel and leave to rise for 30 minutes.
Step 6 of 6
Pre-heat the oven to 160°C and bake the buns for 30 minutes until golden. Serve sticky side up.
