To make the base
- 10 oreo biscuits (with filling, red velvet flavour), crushed
- 30mL milk
To make the ice cream
- 8 oreo biscuits (with filling, red velvet flavour)
- 300grams thickened cream
- 30grams caster sugar
- 250grams cream cheese
- 40grams caster sugar
Description
An ice cream cake using red velvet Oreo biscuits, cream cheese and thickened cream
Method
Step 1 of 10
Line a 6 inch loose base cake tin with baking paper.
Step 2 of 10
Combine milk with crushed Oreo biscuits crumbs. Pour into the prepared cake tin and using a spoon pressed down to form a thin layer. Put inside the freezer for at least 30 minutes.
Step 3 of 10
Roughly chopped up 8 pieces of the Oreo biscuits. Leave aside.
Step 4 of 10
Beat cream cheese with 40g sugar in one bowl, beat thickened cream with 30g sugar in another bowl. Fold cream cheese mixture with thickened cream mixture together, add in chopped Oreo biscuits.
Step 5 of 10
Remove the cake tin from the freezer, pour in the cream cheese and thickened cream mixture.
Step 6 of 10
Smooth the top and put into the freezer for at least 8 hours or until firm to touch.

Decorate with more Oreo biscuits before serving.
