Description

A scrumptious source of vitamins and antioxidants, a few punnets of berries can be turned into a dessert in a matter of minutes with this easy, creamy layering and cheat’s brulee on top.

Method

Step 1 of 4

If you are using strawberries, dice them so that they are roughly the same size as the other berries. Mix all the fruit with the lemon juice and 1 tablespoon of caster sugar in a non-reactive bowl, and set aside for 30 minutes to macerate.

Step 2 of 4

Place the double cream in a bowl and whisk to form stiff peaks. Fold in the yoghurt, vanilla extract, and the remaining caster sugar.

Step 3 of 4

Using 4 wide-mouth glasses, place one-eighth of the fruit at the bottom of each glass. Top this with a tablespoon of the whipped cream mixture, and spread it out evenly. Repeat the process until you have two layers of fruit and cream.

Step 4 of 4

Sprinkle 1 heaped teaspoon of the brown sugar over the top layer of cream in each glass, spreading it out lightly with the back of a teaspoon. Place the desserts in the fridge and chill for at least 30 minutes, or until the sugar has melted into the creamy topping, before serving.
