Description

This simple little trick can turn a luscious fruit salad into something far more special.

Method

Step 1 of 4

Make a fruit salad by cutting the fruit into similar-sized chunks, about 1cm, or the same size as your smallest fruit, discarding the peach stones, if using. Mix in 1 tbs of the caster sugar and leave to macerate, at room temperature, for 1 hour.

Step 2 of 4

Whisk together the cream and remaining caster sugar until it is thick. Gently fold in the Greek yoghurt and vanilla extract until well combined and chill until needed.

Step 3 of 4

When the fruit is ready, spread it out in a large shallow bowl and cover it with a thick layer of the whipped cream mixture. Sprinkle over the brown sugar as evenly as possibly, until there is a thin, even layer all over the cream, and you cannot see it underneath. You may need a little more sugar, depending on the diamater of your serving bowl.

Step 4 of 4

Chill the fruit salad in the fridge for 30 minutes, until the sugar has dissolved and there are no granules left.
