Description

This creamy apricot and orange fool recipe is easy to make, budget-friendly and is the perfect dessert for entertaining family and friends.

Method

Step 1 of 3

Preheat the slow cooker if necessary; see the manufacturer's instructions. Put the apricots, orange zest and juice, and sugar into the slow cooker pot and pour over the water. Cover with the lid and cook on low for 3-4 hours or until the apricots are plump.

Step 2 of 3

Lift the pot out of the housing using oven mitts and allow the apricots to cool, then puree with an immersion blender or transfer to a blender and whiz until smooth.

Step 3 of 3

Fold the custard and yoghurt together until just mixed, then add the apricot puree and very lightly mix for a marbled effect. Spoon into the glasses and serve with dainty cookies.
