- 100grams plain dark chocolate, broken into squares
- 3 eggs, separated
- 50grams self-raising flour, sifted
- 40grams caster sugar
- 150grams raspberries
- 1 icing sugar, for dusting

Method
Step 1 of 5
Put the chocolate in a heatproof bowl and melt over a saucepan of gently simmering water.
Step 2 of 5
Place the melted chocolate in a large bowl and whisk in the egg yolks. Fold in the flour.
Step 3 of 5
Whisk the egg whites and caster sugar in a medium clean bowl until they form soft peaks. Beat a spoonful of the egg whites into the chocolate mixture to loosen it up before gently folding in the rest.

Divide the raspberries between 4 lightly greased ramekins, pour over the chocolate mixture, then bake in a preheated oven, 190°C, Gas Mark 5, for 12-15 minutes until the soufflés have risen.
Step 5 of 5
Dust with icing sugar and serve immediately.
